hermobreak or horizontal cookers are designed to cook or cool fruit or vegetable pulp. They consist of a semicircular main body divided into two chambers, one for the product and the other for heating or cooling fluid, depending on the case. The chambers are attached to each other, producing a heat exchange that makes possible the cooking or cooling of the product.
The movement of the product along the chamber is made by the action of a spindle that incorporates the shaft of the machine, which provides a slow advance of the product from the inlet to the outlet, thus producing a temperature jump. The blades of the shaft work as a horizontal agitator.
